Before I wanted to teach my brother how to make the Chicken Cordon Bleu, I taught my little sister how to make it. It actually came out very good. This time I tried something new before I had her do anything. The thing she had to do was copy the recipe a total of three times. After she did this, I had her get the ingredients out and start pre-heating the oven to three hundred and fifty degrees, the temperature at which it needs to cook. Then she got the pans out and sprayed them with pam non stick spray. I showed her how to wrap the chicken with the cheese next, and then dip them in bread crumbs, then placed on the plate. I demonstrated twice, then I had her do the rest of them. Then we baked them in the oven for 20 minutes, making sure not to rotate them at all. After checking that the chicken was completely done, we put more cheese on top of it, and baked them for an additional five minutes. Finally, we took them out and served them. Everyone loved them.

20% project week2-Joseph Zayas-period 3
As of this week, I have been trying to perfect how to make the Le Cordon Bleu so I can teach my little brother exactly how the dish is supposed to be prepared. As of right now, what I keep messing up is the bottom of the dish keeps getting a little to crispy. So far, I have tried using a couple of different methods to keep them from getting too crunchy on the bottom. A few of these methods include putting aluminum foil on the pan, spraying the pan with non stick spray, and finally tried oiling the pan down with melted butter. I tried making it yesterday. I used three different pans and tried each method that I described above. The one with the aluminum foil still had a little burn on them. The one with the cooking spray burned a little bit also. The one that i melted the butter on actually did not burn ay all, they were just a little crispy. I think the next time I make them I will use the butter method for the next time I make it.

20% project week1-Joseph Zayas-period 3
For the last couple of weeks, I've been trying to perfect a couple of recipes before I teach my little brother how to cook them. Mainly, they've been meals with the main meat product being chicken. One of these is called Chicken Cordon Bleu. Basically, its chicken wrapped with mozzarella cheese and ham. First, you have to make sure that the chicken is the right thickness, one and a half inches thick, so it can roll easy. Then, you season the chicken on both sides with salt and pepper. After, place the mozzarella cheese and ham on top, then roll it tightly and secure it with a toothpick. Next, roll it in breadcrumbs and place it on a baking sheet that was sprayed with cooking spray. Then, place in oven at 350 degrees for 25 minutes, not turning them over. Finally, after the 25 minutes, pull out, place another slice of cheese and bake it for 5 more minutes. Take out of oven, plate them, and enjoy. :)

20% project week9-Joseph Zayas-period 3
This week, I wanted to try to teach my little brother something I learned only fairly recently. In my culinary class, our teacher tought us how to make pizza from scratch. We did it twice in culiary, and both times I was very pleased with the end results. So I decided if I could learn it so fast, my little brother should to, as he's like a little shadow of me cx.
For the first step, we mixed together our flour, salt, yeast, and water together for 20 minutes. Then we had to wrap it up and put it away overnight, so it could sit. The next night, we rolled our mixture out and rolled it into about a 1/4 inch for our crust. Then we put it on a greased baking pan, and folded the edges up to make a crust. Next, we put marinara sauce, cheese, pepperoni, and more chees on it for toppings. Finallu, we put it in our preheated oven of 500 degrees for about 10-15 minutes, depending on how crispy you want the crust. I woukd say his came out pretty good for his first time.

20% project week 8-Joseph Zayas-period 3
This
week, for my twenty percent project, I took my little brother and sister to the
store so we could stalk up on all of the delicious things we will need to make
a Thanksgiving feast. The first thing we did was we decided to not buy turkey,
as no one really likes it in the house, so we just bout a lot of ham (two half
hams and a ham in the can). We also bought a bag of potatoes, a couple of boxes
of the Velveeta macaroni and cheese boxes, four cans of green beans, six cans
of corn, and lots of beef gravy. We also
got things to make pumpkin and chocolate pie, rolls, and stuffing. When we got back home, we unloaded it all out
onto our counter, and pulled what we had already stocked in our cupboards. This
included pineapples, cranberry sauce, mustard, and brown sugar. We got all this
ready so i can teach them tomorrow, on Thanksgiving.

20% project week 7-Joseph Zayas-period 3
This
week, I showed my little brother how to make deep fried chicken with fried
potatoes. The first thing I had him do was to get out our deep fryer, clean it,
and then I showed him how to fill its oil back to the level it should be at. Then
I showed him how to cut the potatoes into fries, after the skin was taken off.
When he finished that, I showed him the trick of running the potatoes under
cold water to run most of the starch out of them, and keep them a white color.
After throwing the first batch of those in the fryer, I showed him how to cut
the chicken. First, you have to take most of the fat off, and cut it into small
strips. After all the potatoes were cooked, I showed him on the first batch how
to bread the chicken. First, you need 3 eggs and 2 boxes of shake and bake, or
1 jar of Italian bread crumbs. Then dip
the chicken first in the eggs, then roll it in the shake and bake/ bread
crumbs, and set them in the fryer basket. They take about 10 minutes to cook at
350 degrees heat. He finished off the rest of the batches, and using napkins,
we tried to soak most of the grease up. Then we served it for dinner, and
everyone enjoyed it.

20% project week 6-Joseph Zayas-period 3
This week, for my twenty percent project I taught
my little brother how to make something that I had learned in my culinary class
from Chef Bob. The food is called Ali Olio. It pretty much turned out to be
garlic spaghetti.
The first thing I had my brother do was to watch me
make it. I had him sit there while I demonstrated step by step how to do it. On
one part, you literally set the ingredients in the pan on fire, and as I had a
difficult job of doing this, I decided I would do it for my brother so he
wouldn't burn the house down. After I finished, I had him try it. Then it was
his turn to do it.
The first thing he did was set a pot of water to
boil for the noodles. While that went, he chopped garlic, onion, and dried chilies.
Then he opened the chicken stock, Parmesan cheese, butter, and the marinara
sauce. Next, he cooked the noodles till they were done, strained out the
noodles, but kept the water in the pot. Then, he put the pan on the burner and
heated it on high heat. The pan got pretty hot, and he put the oil, garlic,
onions, and chilies in the pan. That's when I took over for a couple of seconds
and set the mixture up in a blaze. After it went down, he added the chicken
stock and marinara sauce and heated it with the ingredients already in the pan.
While he was doing this, I helped him by putting the water back on the burner,
re-added the noodle, and restrained them so they would be nice and hot.
Finally, he threw the pasta in the hot pan with the sauce, added the butter and
Parmesan cheese, and stirred until it was well mixed. Then we platted it and
had everyone in the house, who was there at the time, try it. They all loved
it, including myself. This is one recipe I think he mastered in one try.
